Enzymes (formerly also called ferments) are natural substances. They are special proteins that are able to catalytically break down and liquefy organic materials. They are such complex and large biomolecules that they cannot be chemically reproduced. They are therefore obtained by biosynthesis from biological sources (such as bacteria or fungi). Enzymes are involved in practically all biological degradation and conversion processes, such as in our digestion, the formation of compost from organic waste or the production of foods such as cheese, beer/wine or bread.
Enzymes act specifically. I.e. amylases split carbohydrates or sugars, proteases liquefy proteins, lipases react with fats and cellulases with cellulose or paper or plant components.
Clearly: for many applications, such as degreasing surfaces, there are proven and fast-acting standard solutions on the market – usually highly concentrated alkaline cleaning agents are used for this purpose. However, these have some very unpleasant side effects:
